Mixed Berry Overnight Breakfast Casserole

Christmas morning breakfast is always a production around here! We wake up early, open presents from Santa, take a break to enjoy breakfast together, and then head right back to the living room to open more presents. There is nothing more special than Christmas morning!

Our normal tradition is to have this Blackberry Overnight French Toast Casserole, but this year we are trying something a little different…this delicious Mixed Berry Overnight Breakfast Casserole!

Fresh bakery croissants and topped with fresh mixed berries, baked, and then drizzled with a delicious vanilla cream sauce. It’s warm, tangy and sweet, and perfect for Christmas morning (or any other morning really)!

Maybe Christmas will be spent with just your family or maybe you will be hosting extended family…however you will be spending it, this recipe is sure to be one that everyone loves. Hope you’ll give it a try…ENJOY!

MIXED BERRY OVERNIGHT BREAKFAST CASSEROLE

INGREDIENTS:

  • 4-5 large croissants cut into 1 inch cubes
  • 1 1/2 cups FRESH mixed berries (anything goes…blackberries, blueberries, raspberries, or strawberries)
  • 1 8 ounce block of full fat cream cheese (softened)
  • 2 large eggs
  • 1 cup of whole milk
  • 1/2 cup of granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup of powdered sugar (for glaze)
  • 3 tablespoons of heavy cream (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

DIRECTIONS:

Grease an 8×8 baking dish with butter or pam. Put the cubed croissants and the mixed berries into the dish and spread evenly as you go. Set aside.

Beat cream cheese with a hand mixer until smooth. Add in milk, sugar, eggs, vanilla, and lemon…beat until smooth and well combined.

Pour the wet ingredients over your croissant and berry mixture. Cover tightly with press n’ seal and refrigerate overnight.

Remove from refrigerator, set on counter while preheating oven to 350 degrees. Remove press n’ seal and cover with aluminum foil. Bake covered for 30 minutes. Remove aluminum foil after 30 minutes and bake for another 15 minutes or until golden brown on top.

While the casserole is baking, add the powdered sugar, heavy cream, and vanilla extract to a bowl and whisk together until well combined. Drizzle the glaze atop of your casserole when it is fresh out of the oven.

Serve your casserole warm and dust with additional powdered sugar if you’d like. ENJOY!
